European Angelica
Angelica archangelica
Dramatic in structure, the bright yellow-green umbel flowers that bloom in its second year attract butterflies and beneficial insects to the garden. Angelica is prized by herbalists as a digestive aid, among many other uses. Culinarily, garden angelica has a distinctly sweet floral aroma and is one of the most common botanicals for many classic liquors and bitters, including gin, absinthe, and vermouth. The large hollow stems are wonderful when candied, and it also has an edible flower!
