Chufa/Tiger Nut

Cyperis esculentus

Chufa produces multiple underground pea-sized tubers that have a wonderful crunchiness and delicious sweet taste reminiscent of fresh coconut. It is an inexpensive source of protein and is the main ingredient of Spanish horchata, and is now being used in products as a substitute for dairy for people who are lactose-intolerant.

Water: Must be kept moist

Hardiness: Frost Hardy

Habit: A linear leaved sedge that grows to 12” tall

Light: Full Sun

Soil: Average to rich garden soil

Origin: Found widely in much of the Eastern Hemisphere. Not invasive like its cousin, the umbrella sedge.
