Bronze Fennel
Foeniculum vulgare dulce 'Rubrum'
Can be used like common fennel, but this variety is not invasive and hosts swallowtail butterfly caterpillars! Its fresh bronze or copper-colored leaves add interest to salads with its unusual color and the surprising taste of sweet fennel.
