Victoria’ Rhubarb

Rheum rharbarum 'Victoria'

Has large, medium-green leaves which are toxic to eat, but its brilliant pink to red edible stalks are perfect in pies and tarts in late Spring/early Summer. You can freeze the stalks to enjoy rhubarb longer. Make sure not to harvest the first year so it can get established, and thereafter only harvest a third of its leaf stalks annually so that it can persist for several years to come.

Water: Needs even moisture, do not over or under water

Habit: Will grow 2 to 4' tall and at least as wide, so be sure to space plants 4' apart

Light: Full Sun

Soil: Fertile, well-draining soil
