Minutina/Buckhorn Plantain

Plantago coronopus

Grown as a leaf vegetable sometimes known as “herba stella,” this plantain has a rich deep sweet flavour with a substantial meaty texture. Recently it has become popular as a frost-hardy winter salad crop for specialty markets. A favorite ingredient in OAEC’s famous salad mix, especially in the cool seasons.

Habit: Produces a basal rosette of narrowly lance-shaped leaves that are toothed or deeply divided, with 8” tall, erect inflorescences

Soil: Mainly grows on sandy or gravelly soils close to the sea, but also on salt-treated roadsides

Origin: Eurasia and North Africa
